Ginger Turmeric Chicken Soup:

With the weather changing and unfortunately those sniffles are becoming more than frequent, soup has been on the stove in my house. When I look for a really great soup, I want something that soothes my soul, has a lot of flavor and just makes you feel warm and fuzzy inside! For me, that soup does just that.

Full of spices, full of veggie and a protein kick to help fill you up as well. This soup has substance! LOVE this ginger turmeric soup, not to mention to funky ingredients in this baby!

Here’s the recipe:

Ingredients:

Directions:

  • 1. Heat a large pot to medium heat. Add oil, carrots, celery and onion. Stir off and on until onions are translucent. Add garlic for 1-2 minutes until slightly browned. Add stock and bring to a boil.
  • 2. Reduce heat. Add turmeric, ginger, salt and pepper. Add chicken and cover pot. Simmer until chicken is cooked through and no longer pink.
  • 3. Right before serving, stir in spinach and allow it to wilt for about 1-2 minutes. Salt and pepper to taste before serving.

  • Notes:

    The absolute favorite part of this soup is how flavorful this broth truly gets. But there are benefits to what I’ve included with seasoning! Ginger is great for digestion, headaches, nausea and sometimes a bit spicy to help clear up those sniffles. I am an avid ginger tea drinker, so this soup is right up my alley.

    I do add quite a bit of ginger to this soup because I am a ginger LOVER. If you aren’t sure about ginger or want something a bit more mild, start off with a little and taste as you go. That goes for the other spices as well! Do what works best for you and your taste buds.

    With the turmeric it is known to be a anti-inflammatory and an antioxidant powerhouse. I do have to warn you though, turmeric is also great at staining! Do not wear anything you love just in case and it would probably be best to steer clear from white plates as well, just in case. But it has such a great mellow, earthy flavor that really helps balance out that spice from the ginger.

    To make this vegan or vegetarian you can always swap out chicken for tofu, or just forgo it all togethter. Plus use veggie stock over chicken stock and you are all good to go!
