Almond Cookie Dough Bites

Lately with all the time on my hands and staying home a bit more than normal I have been prepping a few things for the week. Something that I have been prepping to have something special to look forward to is a little sweet treat or dessert. I’m not one for buying them because I truly love baking and cooking so much!

This recipe came about honestly just based on some basics that I typically always have on hand, that makes it easy and a lot less stressful AKA much more enjoyable! It also doesn’t take any cooking or baking. A dessert that takes maybe 10 minutes to come together, yes please!

Peanut butter is hands down my go-to nut butter, but in this recipe I used almond butter along with almond extract to get a very forward almond flavor, which I LOVE. It is a really refreshing change of pace. If you like marzipan or almond joys, these almond cookie dough bites will be right up your alley!

Super, super easy right? They are smaller balls, but I think that makes it perfect for a little snack. I personally love to grab one after lunch to end my meal with a little sweetness. This could be used with different nut butters, but it may have some conflicting nut flavors.

If you want to make these a little fancier or you are a chocolate lover like me, you can always cool them and dip them in chocolate to have more of a bon bon type dessert. If the dough isn’t coming together where you cannot roll the dough into balls, add a little more of the ground oats/oat flour.
